The Queen’s Royal Jam Pennies (Jam Sandwiches) – Delectable little jam penny sandwiches, perfect for a Royal tea party, Jubilee street party or for the children’s tea or supper.

I have used fluffy white bread in my sandwiches as shown in the photo, and some rather good raspberry jam.

However, strawberry and mixed berry jam is also fabulous in these dainty little sandwiches, as is lemon curd for citrus lovers.

Jam sandwiches are a British tea time (or supper) tradition – and I remember my mum and my grandmother making a round of jam butties, as we called them, when we got home from school, to fill the gap between homecoming and tea.

In the past,when I have made these jam sandwiches for Maundy Thursday,I have used a seven grain sliced bread, but any good quality sliced bread works well, as long as it’s not too thick.

This recipe is perfect for the children to get involved too, get them to stamp out the bread pennies, as well as butter the bread and add the jam.

Notes and Substitutions

  • Use good bread and home-made or high fruit content jam.
  • Use plant-based spread for a veggie and vegan version.
  • Raspberry and Strawberry jam is traditional for these sandwiches, but use any berry jam or fruit curd you have to hand.
  • Can be made ahead of time, cover with cling-film, or a damp tea towel to stop them going hard. amd curling around the edges.
  • Great for picnics and the school lunchbox.

Delectable little jam penny sandwiches, perfect for a Royal tea party, Jubilee street party or for the children's tea or supper.

Ingredients

  • 12 slices of sliced bread, such as white, multi-grain or wholemeal
  • Softened unsalted butter, to spread
  • 6 tablespoons Jam, such as home-made strawberry or raspberry jam

Instructions

    1. Cut the crusts off the sliced bread and put to one side for breadcrumbs or bread pudding.

    2. Stamp out little rounds of bread with a scone/biscuit/pastry cutter - smaller is best - I used a 1" (2.5cm) scone cutter for these sandwiches.

    3. Spread the crust-less sliced bread "pennies" with the butter on one side only, just as if you were making normal sandwiches.

    4. Spread the jam of your choice over one side of the buttered bread and then sandwich together with another buttered slice.

    5. Arrange the jam pennies on a plate alongside a pot of tea and other tea time treats.

Notes

How about a marmalade sandwich lol I have some little bread tins somewhere but would love the hovis ones.I think I may look at the fresh fig and ginger jam later in the year, figs are everywhere down here on the Amalfi Coast. thanks for the inspiration Jan
